Be careful with alfalfa sprouts. They need to be very fresh, purchased from a reliable source, and washed and dried thoroughly before you use them. They can be a source of bacterial infections, so anyone with a weakened immune system should avoid them completely.
16 large spinach leaves, rinsed and pat dry
2 slices reduced-fat Swiss cheese, cut into 16 strips
2 ounces oven-roasted deli turkey,cut into 16 strips
1 tablespoon plus 1 tsp. honey mustard
1 medium red bell pepper, thinly slices into 48 strips
1\2 cup alfalfa sprouts
16 wooden toothpicks
1. Place one spinach leaf, smooth side down, on work surface and top with 1 strip of cheese and 1 of turkey. Spread 1/4 tsp mustard evenly over turkey. Top with 3 pepper strips, overlapping slightly, and then 1 1/2 tsp sprouts.
2. Bring sides of spinach to the center, overlapping slightly, forming a roll. Secure diagonally with a wooden toothpick and repeat.
Note: Be sure to line up the ingredients parallel to the center vein of the spinach. Otherwise, it will be difficult to roll and will not resemble a bundle of veggies.
