Stuffed Manicotti

Ingredients

2 tablespoons low-sodium chicken broth
1/2 cup minced onion
1/2 cup minced carrot
1 clove garlic, minced
1 cup low-fat ricotta cheese
1 egg substitute equivalent
2 tablespoons Parmesan cheese
1 tablespoon chopped fresh basil
8 large manicotti shells, cooked
2 cups Marinara Sauce

Directions:

1. In a skillet over medium heat, heat broth. Add onion, carrot, and garlic and sauté for 5 to 7 minutes, until onion is tender.

2. In a large bowl, combine vegetables with ricotta cheese, egg, Parmesan cheese, and basil. Mix well.

3. Stuff some of the mixture into each shell. Place stuffed manicotti shells in a large casserole dish. Pour marinara sauce on top, and let cook at 350°F for 20 minutes.
