Spinach And Bacon

Ingredients

2 slices bacon, cut in very small pieces
1 (16-ounce) package fresh spinach leaves
2 tablespoons water
1/8 teaspoon salt

Directions:

1. Heat a 12-inch nonstick skillet over medium-high heat. Add bacon and cook until crisp. Remove bacon and blot on paper towels. Discard all but 2 tsp of the bacon grease.

2. Increase heat to high and add spinach, water, and salt to the 2 tsp bacon grease. Toss constantly until limp and tender, about 1 minute, using 2 utensils.

3. Remove from heat, crumble bacon on top, and serve.
