Spinach, Chick Pea, and Mushroom Salad

Serving Size: 1 cup


   6 tablespoons olive oil or vegetable oil
   3 tablespoons lemon juice
   1/4 teaspoon salt
   1/4 teaspoon pepper
   1/4 teaspoon dried or 2 Tbsp. fresh mint leaves
   1 (8 1/2-ounce) can chick peas.. garbanzo beans, drained
   1/4 pound fresh mushrooms, sliced
   1 (10-ounce) box fresh spinach, stems removed, leaves washed and patted dry


Method

1. Combine oil, lemon juice, salt, pepper and mint in bottom of salad bowl; add chick peas, then top with mushroom slices and spinach.

2. Toss thoroughly so that all leaves are covered with the dressing.

Balance with lower-fat dishes on days you use this recipe
