Skillet Chicken And Stuffing

Ingredients

4 ounces lean breakfast pork sausages
1 cup finely chopped green bell pepper
1 1/2 cups herb-seasoned seasoned stuffing mix
1 cup water
4 boneless, skinless chicken breast halves (4-oz each), rinsed and patted dry
black pepper to taste
paprika to taste (optional)

Directions:

1. Heat oven to 350°F.

2. Heat a 12-inch nonstick skillet over medium-high heat. Add sausage and cook until no longer pink, about 3 minutes, breaking up larger pieces with a spatula. Reduce heat to medium, add peppers to skillet, and cook 4 minutes or until peppers are tender-crisp.

3. Add stuffing and water and stir thoroughly. Remove from heat, top with chicken breasts, and sprinkle with pepper and paprika, if desired.

4. Cover tightly and bake 22-25 minutes or until chicken is no longer pink in center. Remove from oven. Let stand, covered, 5 minutes to develop flavors before serving.
