Rough Potato Mash

Ingredients

1 pound unpeeled russet potato, diced
1/2 cup fat-free evaporated milk
2 tablespoons reduced-fat margarine
1/4 cup light sour cream
1/8 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper

Directions:

1. Place 2 cups water in a large saucepan, place a collapsible steamer basket on bottom of pan, arrange potatoes evenly on basket, and cover tightly. Bring water to a boil and steam potatoes 8 minutes or until just tender.

2. Place potatoes in a serving bowl and, using a whisk, mash potatoes. Add remaining ingredients and whisk until well blended. The texture will be a bit lumpy.
