1. In a large skillet, heat oil over medium heat. Add pork chops and lightly brown on both sides.
2. Add the tomatoes, garlic, pepper, and basil cover. Simmer for 25 to 30 minutes, turning pork chops once. Add the olives and continue to simmer over low heat for 7 to 10 minutes.
3. Arrange rice on serving platter, place pork chops over rice, spoon sauce over the top, and serve.
