Peasant-Style White Beans And Rice

Ingredients

1 cup uncooked white rice
1 (16-ounce) can navy beans, rinsed and drained
3 tablespoons chopped fresh basil or 1 tablespoon dried basil
2 tablespoons chopped fresh parsley
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1 lemon, cut into 8 wedges

Directions:

1. Cook rice according to package directions, omitting any salt or fat.

2. When rice is cooked, place in pasta bowl. Top with beans, basil, and parsley and toss very gently. Drizzle oil over the top and sprinkle with salt. Serve immediately with lemon wedges.
