Pasta With Vegetable Clam Sauce

Ingredients

5 cloves garlic (medium), crushed
2 tablespoons olive oil
4 stalks celery, chopped
2 small zucchini, thinly sliced
4 chopped scallion
1/4 pound fresh sliced mushrooms
2 tablespoons chopped fresh parsley
7 ounces clams, undrained
2 small chopped tomatoes
1/3 cup dry white wine
2 tablespoons fresh lemon juice
Fresh ground pepper
1 pound cooked, shaped pasta
1/2 cup Grated Parmesan cheese

Directions:

1. In a large skillet over medium heat, sauté garlic in oil until lightly browned. Add celery, zucchini, scallions, mushrooms, and parsley sauté until vegetables are just tender (about 5 minutes).

2. Add clams with their juice, tomatoes, wine, lemon juice, and pepper stir well. Let simmer, uncovered, for 4 to 5 minutes. Place cooked pasta on a serving platter. Remove sauce from heat and spoon over the pasta. Sprinkle with cheese and serve.
