Use a large heavy skillet with cover or a Dutch oven for this. Multiply or divide ingredients to fit your needs. Serve with crusty bread and a vegetable salad. How about a baked apple for dessert? See DESSERT section for microwave instructions.
4 (3-oz.) meaty, center-cut pork chops, 3/4-inch thick
1/4 cup flour
2 teaspoons paprika
1/2 teaspoon salt (optional)
1/4 teaspoon pepper
1 large or 2 medium onion, thickly sliced
1 1/2-2 cups skim milk
1 large stalk broccoli (about 1 lb.)
1. Trim fat from chops and fry in skillet over medium-high heat.
2. Combine flour, papriks, salt and pepper and coat chops. (Save remaining flour.) Brown chops in skillet. Coat onions with remaining flour and add to skillet. Brown lightly.
3. Add 1 1/2 cups milk. Bring to boil, cover and simmer for 20 minutes, stirring occasionally. If sauce is too thick, add more milk.
4. Peel broccoli stalk if tough, cut into slices, and add to skillet. Place florets on top. Cover and simmer until broccoli and pork are tender.
*Not recommended for low-sodium diets if salt is added.
