1. Heat oven to 325°F.
2. In a medium bowl, combine milk, eggs, egg whites, sugar, and 1/2 tsp extract and whisk together until well blended.
3. Coat 6 6-oz pyrex ramekins with cooking spray and set in a 9-inch by 13-inch baking pan. Pour equal amounts of the egg mixture in each of the six ramekins and place pan on center rack of oven. Pour the boiling water in pan around ramekins. Bake 40 minutes or until knife inserted in center comes out clean.
4. While flan is baking, in a small bowl combine coffee and water and stir until granules have dissolved. Add chocolate syrup and remaining 1/2 tsp extract and stir until well blended.
5. Remove cooked flans from oven and place on wire racks to cool slightly. Insert knife and slide around outer edges to release custard. Place dessert plate over each ramekin and invert. Spoon equal amounts of the sauce around outer edges of each flan, about 1 1/2 tsp per serving.
