Minted Espresso Hot Chocolate

Ingredients

3 cups fat-free milk
6 tablespoons chocolate-syrup
1 tablespoon instant coffee granules, plus
1 teaspoon instant coffee granules
1/2 teaspoon peppermint extract
1/4 cup fat-free whipped topping

Directions:

1. Place milk, chocolate, and coffee in a medium microwaveable bowl. Cover with plastic wrap and microwave on HIGH for 2 minutes.

2. Stir contents so coffee dissolves and microwave on HIGH for 2 more minutes.

3. Remove from microwave, stir in extract, and pour into 4 individual cups. Top each with 1 tablespoon whipped topping.
