1. Heat oven to 350°F. Coat a baking rack and pan with cooking spray.
2. In a medium bowl, combine ground beef with 1/3 cup picante sauce, oats, egg white, salt, and pepper. Mix until blended.
3. Shape meat into an oval about 5 inches wide by 7 inches long and 2 inches thick. Place meat loaf on rack and spoon remaining picante sauce evenly over the top.
4. Bake 50 minutes or until no longer pink in center. Remove from oven and let stand 5 minutes for easier slicing. Cut into 8 slices.

Serves 4
4 oz uncooked small elbow macaroni
1 lb lean ground beef (96% fat-free)
8 oz frozen pepper-onion stir-fry, thawed
1/3 cup ketchup
1/4 cup pasta water
1/4 tsp salt
1. Cook macaroni according to package directions, omitting any salt or fat.
2. Meanwhile, heat a 12-inch nonstick skillet over high heat. Add beef and cook 3 minutes or until no longer pink. Add stir-fry and cook 3 minutes or until onions are tender, stirring constantly. Stir in ketchup, remove skillet from heat, and cover to keep warm.
3. When macaroni is cooked, add pasta water, drained macaroni, and salt to the beef mixture.
Stir and serve.
