Lamb Kabobs

Ingredients

1/2 cup low-calorie Italian salad dressing
1/4 cup fresh lemon juice
1 teaspoon dried oregano
Fresh ground pepper
1 1/2 pounds lean boneless lamb, cut into 2-inch pieces
1/2 pound mushrooms, stems removed
10 cherry tomatoes
1 red bell pepper, cut into 1-inch squares
1/2 yellow squash, cut into 1-inch chunks

Directions:

1. In a shallow baking dish, combine the salad dressing, lemon juice, oregano, and pepper mix thoroughly. Add lamb cover, refrigerate, and let marinate for 6 hours or overnight.

2. Remove meat from marinade. Thread the lamb, alternating with vegetables, onto 6 skewers. Broil the skewers 7 to 8 inches from the heat for 18 to 20 minutes. Transfer to a platter and serve.
