Honey-Glazed Almond Pears

Ingredients

1/2 ounce sliced almonds (scant 3 Tbsp)
2 tablespoons honey
2 pears (8-oz each), cut in half lengthwise and cored
1 tablespoon reduced-fat margarine
1/2 teaspoon vanilla extract

Directions:

1. Heat a 12-inch nonstick skillet over medium-high heat. Add almonds and cook 4 minutes or until lightly browned, stirring frequently. Remove almonds from skillet.

2. Reduce heat to medium and add honey. Arrange pear halves, cut side down, on top of honey and cook 6 minutes or until pears are just tender. Remove skillet from heat and place pears, cut side up, on serving platter.

3. Stir margarine and vanilla into the pan drippings until well blended. Stir in almonds and spoon equal amounts over each pear half. Let cool to room temperature to allow flavors to blend before serving, about 30 minutes.
