Hash Browns

Ingredients

2 large baking potatoes, (about 10 oz each)
2 tablespoons minced onions
1 teaspoon garlic powder
1/2 teaspoon dried thyme
Fresh ground pepper

Directions:

1. Peel and shred each potato with a hand grater or a food processor with grater attachment. Combine potatoes with onion and spices.

2. Coat a large skillet with cooking spray and place over medium heat until hot.

3. Pack potato mixture firmly into skillet cook mixture for 6-8 minutes or until bottom is browned. Invert potato patty onto a plate and return to the skillet, cooked side up.

4. Continue cooking over medium heat for another 6-8 minutes until bottom is browned. Remove from heat and cut into 4 wedges.
