1. Place 2 cups water in a large saucepan, place a collapsible steamer basket on bottom of pan, arrange potato wedges evenly on basket, and cover tightly. Bring water to a boil and steam potatoes 8 minutes or until just tender.
2. Place potatoes in a serving bowl and toss gently with oil, lemon pepper seasoning, oregano, and salt. Cover and let stand 3 minutes to absorb flavors.
3. Sprinkle with parsley and serve.
