Golden Fried Fish

Ingredients

3 tablespoons fat-free Italian salad dressing
20 fat-free crackers, coarsely crushed
1/8 teaspoon black pepper
2 tablespoons vegetable oil
4 lean mild fish filets, such as grouper fillet, rinsed and patted dry
1 medium lemon, cut into eight wedges

Directions:

1. Heat oven to 450°F.

2. Place salad dressing in a shallow dish, such as a pie pan. In another shallow dish or dinner plate, combine cracker crumbs, paprika, and black pepper and stir well to blend thoroughly.

3. Coat a 9-inch by 13-inch baking dish with cooking spray and add oil. Using fingertips, spread oil evenly over bottom of pan. Place dish in oven for 3 minutes.

4. Meanwhile, working quickly and with one filet at a time, coat filet with dressing and then coat with cracker mixture. Place on a clean dinner plate and repeat with remaining filets.

5. When all filets are coated, place in heated baking dish and bake 4 minutes. Carefully turn with a fiat spatula and cook 2 minutes longer or until fish is opaque in center. Serve immediately with lemon wedges.
