Garlic Fettucine

Ingredients

2 tablespoons olive oil
12 plum tomatoes, seeded and diced
4 cloves garlic, minced
1/4 teaspoon salt (optional)
Fresh ground pepper
1 teaspoon capers
2 teaspoons chopped black olives
6 ounces uncooked fettuccini pasta
1/4 cup chopped fresh basil
sprig parsley for garnish

Directions:

1. In a large saucepan over medium heat, heat the oil. Add the tomatoes, garlic, salt, pepper, capers, and olives. Let simmer over low heat for 30 minutes, stirring occasionally.

2. Prepare the fettucine according to package directions (without adding salt) and drain. Transfer the fettucine to a serving bowl and spoon sauce and chopped basil on top. Garnish with parsley sprigs to serve.
