Fresh Lime'd Pork


Serves: 4

Ingredients

1 pound boneless pork chop, cut into thin strips
2 medium limes
1 1/2 teaspoons grated ginger root
2 tablespoons chopped fresh cilantro, divided
1/8 teaspoon salt
1/2 teaspoon black pepper (to taste)

Directions:

1. Place pork in a shallow bowl or pie pan. Squeeze the juice of 1 lime over pork, add ginger and 1 Tbsp of the cilantro, and stir to blend. Let stand at room temperature 15 minutes. Remove pork from marinade and pat dry.

2. Heat a 12-inch nonstick skillet over high heat. Spray skillet with nonstick cooking spray. Add half the pork and cook 2-3 minutes or until beginning to brown, stirring constantly for even cooking. Remove from skillet and place on separate plate. Repeat with remaining pork.

3. Add first batch of pork to second and cook 15 seconds to heat through. Place on serving platter, sprinkle with remaining 1 Tbsp cilantro, and squeeze the juice of the remaining lime evenly over all. Sprinkle with salt and pepper and serve immediately.
