Free Veggie Stir-Fry

Ingredients

1 (6-ounce) yellow squash, trimmed and cut into eighths lengthwise
1/2 medium green bell pepper, cut in thin strips
4 ounces yellow onions cut into 1/2-inch wedges, layers separated
1/8 to 1/4 teaspoon salt

Directions:

1. Heat a 12-inch nonstick skillet over medium-high heat. Coat skillet with nonstick cooking spray. Add vegetables and cook 3 minutes, stirring constantly.

2. Add salt and cook 1 minute longer or until just tender-crisp.

3. Remove from heat and let stand 1 minute before serving.
