Creamed Spinach

Ingredients

1 1/2 pounds fresh spinach leaves
2 tablespoons low-calorie margarine
2 tablespoons cornstarch
Fresh ground pepper
dash salt
3/4 cup skim evaporated milk
1 egg substitute equivalent, beaten

Directions:

1. Remove and discard tough spinach stems. Wash leaves thoroughly and chop. Steam the spinach for 3 to 5 minutes and set aside.

2. In a skillet, heat margarine. Blend in cornstarch, pepper, and salt. Stir constantly.

3. Add milk, bring to a boil, and stir constantly for 1 minute. Remove sauce from heat.

4. Vigorously stir about 3 tablespoons sauce into the beaten egg and immediately add this mixture back to the skillet. Add steamed spinach to the skillet and coat with sauce. Serve.
