Couscous Salad With Capers And Olives

Ingredients

3/4 cup water
1/2 cup dried uncooked couscous
2 tablespoons sliced olives, drained
2 tablespoons capers, rinsed and drained
2 tablespoons lemon juice
2 teaspoons extra virgin olive oil
3/4 teaspoon dried oregano
1/8 teaspoon black pepper

Directions:

1. In a small saucepan, bring water to a boil, stir in couscous, cover tightly, remove from heat, and let stand 5 minutes.

2. Fluff couscous with a fork. Cool by placing hot couscous on a baking sheet or sheet of foil in a thin layer, about 5 minutes.

3. Meanwhile, in a medium bowl, combine remaining ingredients.

4. When couscous is completely cooled, combine with dressing and toss gently.
