Cilantro Black Bean And Rice Salad

Ingredients

1/2 cup uncooked white rice
1 1/3 cups water
3/4 cup canned black beans, rinsed and drained
1/4 cup fresh cilantro leaves (pinch leaves off stems)
1/4 cup lime juice (2 medium limes)
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons extra virgin olive oil

Directions:

1. Cook rice according to package directions, using 1 1/3 cups water and omitting any salt or fats. Cool by paying hot rice on a baking sheet or sheet of foil in a thin layer, about 10 minutes.

2. When completely cooled, place rice in a medium mixing bowl with remaining ingredients, and toss gently, yet thoroughly. Serve immediately.
