Cherry Soufflé |

3/4 cup water
1 package unflavored gelatin
2 cups water-packed sour cherries, drained and chopped
1 tablespoon fresh lemon juice
2 tablespoons sugar substitute
3 large egg whites
2 cups prepared Low-Calroie, Fat-Free whipped cream (see recipe)

1. In a medium saucepan, combine the water and gelatin; allow to soften for 10 to 15 minutes. Add 1 cup of the cherries, lemon juice, and sugar substitute; bring to a boil.
2. Remove from heat and let cool; refrigerate until thick and syrupy.
3. Fold in remaining cherries, beaten egg whites, and whipped cream. Spoon into a soufflé dish and refrigerate until set.
