Cheddar'd Yellow Squash

Ingredients

4 yellow squash (4-oz each), cut in half lengthwise
1/4 cup finely chopped green onions
1/8 teaspoon salt
black pepper (to taste)
1/2 cup shredded reduced-fat sharp cheddar cheese

Directions:

1. Heat oven to 400°F.

2. Coat a nonstick baking sheet with cooking spray and arrange squash cut side up on baking sheet.

3. Lightly coat squash with cooking spray and top each half with 1 1/2 tsp onion. Sprinkle salt and pepper evenly over all, top with cheese, and bake 20 minutes or until cheese melts.
