Cayenne Fish

Ingredients

2 cups water
2 ounces red potatoes, diced
4 lean mild fish filets, such as flounder filets, rinsed and patted dry
1/2 teaspoon chili powder
2 tablespoons reduced-fat margarine
1 teaspoon Dijon style mustard
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
black pepper to taste

Directions:

1. Heat oven to 400°F.

2. Place 2 cups water in a large saucepan, place a collapsible steamer basket on bottom of pan, arrange potatoes evenly in basket, and cover tightly. Bring water to a boil and steam potatoes 8 minutes or until just tender.

3. Meanwhile, arrange fish filets on a nonstick baking sheet and lightly coat with cooking spray. Sprinkle evenly with chili powder. Bake fish 10 minutes or until opaque in center.

4. In a small bowl, combine margarine, mustard, cayenne and 1/4 tsp of the salt. Remove potatoes from steamer basket. Take filets out of oven and top with equal amounts of the butter mixture (about 2 tsp per filet). Sprinkle the remaining 1/4 tsp salt and black pepper over potatoes and serve.
