This delicious sauce keeps fish moist. Try it over cooked broccoli or string beans, too.
1-1/2 pounds fresh sole filets
3 tablespoons low-fat mayonnaise
2 tablespoons Dijon style mustard
1 tablespoon chopped parsley
Fresh ground pepper
1 large lemon, cut into wedges
1. Coat a baking sheet with nonstick cooking spray. Arrange fillets so they don’t overlap.
2. In a small bowl, combine the mayonnaise, mustard, parsley, and pepper and mix thoroughly. Spread the mixture evenly over the fillets. Broil 3 to 4 inches from the heat for 4 minutes until fish flakes easily with a fork.
3. Arrange fillets on a serving platter, garnish with lemon wedges, and serve.
