Beef Shish Kabobs

Ingredients

1/3 cup olive oil
1/4 cup red wine vinegar
1 tablespoon lite soy sauce
1 clove garlic, minced
1 tablespoon lemon juice
Fresh ground pepper
2 pounds lean beef, cubed
2 large red bell peppers, and green, cut into 1-inch pieces
1 pound mushrooms, stemmed
1 large tomato, cut into wedges
1 medium onion, quartered

Directions:

1. Combine marinade ingredients (first 6 ingredients), and pour over the beef cubes. Let marinate 3 to 4 hours or overnight.

2. Place beef on skewers, alternating with peppers, mushroom caps, tomatoes, and onions. Grill over medium heat, turning and basting with marinade. Arrange skewers on a platter to serve.
