Baked Macaroni And Cheese

Ingredients

1 cup uncooked elbow macaroni
2 egg substitute equivalents
1 cup skim evaporated milk
1 cup small curd low-fat cottage cheese
1/4 cup shredded sharp Cheddar cheese
dash salt
Fresh ground pepper
1 tablespoon Dijon style mustard
1 tablespoon fine dried bread crumbs

Directions:

1. Prepare macaroni according to package directions, omitting salt. Drain and set aside.

2. In a large mixing bowl, combine the remaining ingredients except the bread crumbs with the cooked macaroni.

3. Coat a 1-quart baking dish with cooking spray and spoon the mixture into the dish. Sprinkle the top with bread crumbs. Bake at 350°F for 1 hour and serve hot.
