Southwestern Eggs

12 eggs
1/2 cup milk
2 (4-ounce) cans chopped mild green chilies
1/2 cup chopped red bell pepper
1 cup grated Cheddar cheese
1 cup grated Monterey Jack cheese


Preheat oven to 350 degrees.

In a bowl, beat eggs and milk. Set aside.

In a greased 9 x 13-inch pan, layer chiles, bell pepper, and cheese. Pour egg mixture over top. Cover and bake 30–40 minutes, or until eggs are set in the center. Makes 6 servings.
