Cheeseburger Casserole

2 pounds ground beef
1 large onion chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 3/4 cups grated Cheddar cheese
1 cup biscuit mix
1 3/4 cups milk
3 eggs lightly beaten


Preheat oven to 400 degrees.

Brown beef and onion together in a large frying pan. Drain any excess grease. Stir salt and pepper into beef and onion. Spread mixture into a greased 9 x 13-inch pan. Sprinkle cheese over top.

In a bowl, mix together biscuit mix, milk, and eggs. Pour batter over top. Bake 25–30 minutes, or until lightly golden brown and set in the center. Makes 6–8 servings.
