Rich Cream Sauce

1/3 cup water
1 cup sugar
1 tablespoon butter
7 egg yolk


Boil water and sugar together until you can insert a spoon and spin a thread.

Remove from heat and add butter. Let cool.

Beat egg yolks. Add a little at a time to the syrup. Return to the heat and cook slowly, stirring constantly until thick.
