2 tablespoons shortening

Directions:

Use the same ingredients as Portuguese Pork Tenderloin.

Season as Portuguese Pork Tenderloin. Let roast rest overnight in marinade.

In the roasting pan melt 2 tablespoons shortening. Add the meat and marinade. While the meat is roasting, baste occasionally with its own drippings.

Once the meat is browned, turn the heat down so that the meat can cook through the center.
