Avocado Corn Dressing

Yield: 2 cups


1 ripe avocado flesh removed
1 cup thawed frozen or drained canned corn
1 cup Vegetable Broth plus more as needed
1/4 lime juiced
10 sprigs cilantro with stems
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin


Put all the ingredients in a blender and process on high speed until smooth and creamy. If the dressing is too thick, add a little more broth, 1 to 2 tablespoons at a time, until the desired consistency is achieved. Stored in a sealed container in the refrigerator, Avocado-Corn Dressing will keep for 3 days.
