Ingredients:

3 eggs
1 cup sugar
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 tablespoon lemon juice
2 teaspoons cinnamon
2/3 cup pumpkin
3/4 cup flour
1 teaspoon baking powder
1/4 cup powdered sugar
FROSTING
8 ounces cream cheese
1 stick butter
2 cups powdered sugar
1 teaspoon vanilla extract
Directions:
1. Beat eggs for a long time until they are a pale yellow.
2. Beat in sugar and stir in rest of the ingredients.
3. Spray generously with cooking spray and bake at 350° for 18-20 minutes.
4. Put on a pillow case or a flat dish towel sprinkled with powdered sugar, and roll up immediately. Let cool completely.
5. Frost, roll back up, and refrigerate. Unroll and sprinkle powdered sugar and walnuts to serve.
