I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Cracker Coated Fish Fillets

Serves: 4


Download this recipe.

4 fresh or frozen tilapia fish fillet (5-oz each)
1/3 cup all-purpose flour
1/4 teaspoon pepper
1 egg, slightly beaten
1 tablespoon milk
1 1/2 cups Keebler® Town House® Original crackers (finely crushed)
1/4 cup finely shredded Parmesan cheese
4 teaspoons vegetable oil


1. Thaw fish, if frozen. In shallow dish combine flour and pepper. In another shallow dish combine egg and milk. In third shallow dish combine cracker crumbs and cheese.

2. Roll fish in flour mixture, shaking off excess. Dip into egg mixture. Coat with crumb mixture.

3. In 12-inch nonstick frypan cook fish in hot oil over medium heat for 7 to 12 minutes or until fish is golden brown and flakes easily with a fork, turning once.
