Applesauce Cake with Cream Sauce

This recipe is Trey and Misty's top 3 cakes, and is Trey's #3 favorite in the world. Do not pour the sauce over the whole cake after making. You need to drizzle the sauce over each cut piece, right before serving. Then top with whipped cream.



Ingredients:

CAKE RECIPE:
1 scant cup, packed, light brown sugar
1 scant cup granulated sugar
1/2 cup softened butter
2 large eggs slightly beaten
2 teaspoons vanilla extract
2 teaspoons baking soda
1 teaspoon salt (it is not too much)
2 teaspoons ground cinnamon
2 cups all-purpose flour
2 cups applesauce
CREAM SAUCE FOR CAKE:
1/2 cup butter
1 cup granulated sugar
1/2 cup heavy whipping cream

Directions:

Preheat the oven to 350°. Get out a 9" x 13" pan and spray with Pam right before filling the pan with the batter.

CAKE DIRECTIONS:

1) In the mixer, on medium low speed, beat the sugars, and softened butter together for 5 minutes. Scrape the bowl with a rubber spatula
2) Beat in the 2 slightly beaten eggs, and whip until fluffy. Scrape the bowl.
3) Sift the flour and measure out 2 cups. (Sift before measuring!)
4) Sift the soda, salt, cinnamon, and flour together 2 times. Place the dry mixture in a small bowl. Set aside.
5) Alternately add the flour then the applesauce to the butter/sugar mixture, beating until it is all blended well. Do not overbeat.
6) Pour the Cake batter into the prepared pan. Bake 30 to 35 minutes, until a toothpick comes out clean.
7) Place the cake on a rack to cool.

CREAM SAUCE DIRECTIONS:

1) Put all of the sauce ingredients into a 4 cup Pyrex measuring cup.
2) Place the measuring cup into the microwave and bring to a boil. When the mixture boils, remove from the microwave.
3) Serve warm, drizzled over a piece of cake.
4) Garnish with whipped cream.
