COOKIES |
4 cups brown sugar |
4 cups shortening |
4 eggs |
4 teaspoons vanilla |
4 teaspoons baking soda |
6 teaspoons baking powder |
4 cups oatmeal |
4 cups coconut (optional) |
2 cups chopped nuts (optional) |
6 cups flour |
crushed cornflakes |
GLAZE |
1/2 cup margarine |
4 cups powdered sugar |
4 tablespoons hot water |
4 teaspoons vanilla |
Combine flour, baking powder and baking soda. In a separate large mixing bowl, gradually add sugar to butter, creaming until light and fluffy. Add egg and vanilla; beat well. Gradually add in dry ingredients, blending well after each addition. Stir in rolled oats, coconut and peanuts. Form into balls and roll in crushed cornflakes. Place on ungreased cookie sheets. Flatten slightly with the bottom of a glass dipped in additional crushed corn flakes. Bake at 350 degrees for 12 to 15 minutes. When cool, drizzle with glaze.
GLAZE
Stir together all ingredients until smooth. Drizzle on cooled cookies.
