Macaroni Salad

Servings 8


2 cups elbow macaroni noodles (uncooked)
1/2 cup mayonnaise
1/3 cup sugar
2 tablespoons red wine vinegar
3/4 teaspoon salt
1/4 teaspoon pepper
3 thick cut bacon strips, cooked and crumbled
cilantro, chopped
cheddar cheese block, cut into tiny cubes
black olives, halved or sliced
tomato, diced
celery, chopped (optional)

Boil noodles 8-9 minutes, you want them cooked but on the firm side. Rinse immediately with cold water until cooled down. Stir dressing ingredients together (mayo, sugar, vinegar, salt, pepper). Combine dressing and cold noodles. Combine rest of ingredients (except bacon) and chill until ready to serve. Stir well and add bacon just before serving.
