Salisbury Steak

It is very important to use extra lean ground beef in this recipe or the gravy will become greasy and the patties will fall apart while cooking.


Steaks salt and pepper
1.5 pounds extra lean ground beef (at least 90%)
1/2 cup regular bread crumbs
2 teaspoons mustard
2 teaspoons steak sauce (or Worcestershire sauce)
1 tablespoon ketchup
salt and pepper
1 tablespoon olive oil
1 tablespoon butter
Gravy
1/2 onion (sliced very thin)
2 cups beef broth
2 teaspoons steak sauce (or Worcestershire sauce
1 tablespoon ketchup
1 tablespoon cornstarch (dissolved in cold water)

Combine meat, bread crumbs, and spices in medium mixing bowl or large zip top bag. Form 4 "steak patties" pressing pinkey to make "grill lines". Heat oil and butter over medium heat. Brown patties on both sides and remove to a plate. Add onions and saute until tender. Add rest of ingredients for gravy, whisking continuously, and bring to simmer. Slowly add cornstarch and whisk in. Season to taste with salt and pepper. Add patties and cook until sauce thickens and meat is cooked. Periodically spoon gravy over patties. Turn off heat and cover to keep warm until ready to serve. Serve with mashed potatoes.
