Whole Wheat Banana Oat Muffins


1/3 cup canola oil
1/2 cup honey
2 eggs
1 cup packed mashed ripe banana
1/4 cup milk
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon, plus more for sprinkling on top
1 3/4 cups white whole wheat flour or regular whole wheat flour
1/3 cup oats, plus more for sprinkling on top
1 teaspoon granulated sugar, for sprinkling on top

Preheat oven to 325. Mix wet ingredients in large mixing bowl, then stir in baking soda, salt, cinnamon. Add flour and oats and stir until just combined. Fill muffin cups about two-thirds full. Sprinkle the tops of the muffins with a small amount of oats and a light sprinkling of sugar. Bake muffins for 20 to 25 minutes, or until a toothpick inserted into a muffin comes out clean. Serve warm with butter.
