Peach Oatmeal Muffins


1 cup whole white wheat flour
1 cup white flour
1 cup old fashioned oats
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 eggs
1 cup milk
1/4 cup canola oil
1 teaspoon vanilla
1 (14-ounce) can peach slices, drained, rinsed, and diced (or 1.5-2 cups diced fresh peaches)

Preheat oven to 350. Combine dry ingredients in medium to large mixing bowl. Make well in center and add wet ingredients. Break up egg with fork. Stir wet and dry ingredients until just combined. Fill 14-18 muffin cups. Bake at 350 for 18-22 minutes or until toothpick inserted comes out clean.
