3 pounds frying chicken cut up
3/4 cup milk
2 eggs
1 1/2 cup flour
1 tablespoon garlic salt
1 tablespoon accent
1 1/2 teaspoon paprika
3/4 teaspoon poultry seasoning
1 tablespoon pepper




Blend milk and egg. Combine flour and seasonings in plastic bag. Shake to mix. Add chicken in seasoned flour, shake. Dip chicken pieces in milk/egg mixture. Shake chicken a second time in seasoning mixture to coat thoroughly and evenly.

Pan Fry: Melt shortening in skillet to about 1/2-1 inch deep and heat to 365°. Brown chicken on all sides. Reduce heat to 275° and continue cooking until chicken is tender, about 30-40 minutes. Do not cover. Turn chicken several times during cooking. Drain on paper towels.

Deep Fry: Prepare as above and cook in deep shortening heated to 365° for 15-18 minutes. Drain on paper towels.
