A flavorful Victorian style spice cake. This is a tender cake with lots of good spice flavor. It is especially good with cream cheese icing.
Yield: 13 3/4 cups | all purpose flour |
2 cups | white sugar |
1 1/4 cups | brown sugar |
2 teaspoons | baking powder |
1 1/2 teaspoons | soda |
1 1/2 teaspoons | salt |
1 1/2 teaspoons | ground cloves |
1 1/2 teaspoons | ginger |
1 1/2 teaspoons | nutmeg |
2 1/2 teaspoons | cinnamon |
3/4 stick | butter |
1/2 cup | oil |
1 1/2 cups | buttermilk |
1/2 cup | water |
3 | beaten eggs |
In a large bowl combine the flour, white sugar, brown sugar, baking powder, soda, salt, cloves, ginger, nutmeg and cinnamon. Mix until well incorporated. In a separate bowl combine the butter, oil, buttermilk, water and 3 beaten eggs. Mix well and combine with the dry ingredients. Mix until a smooth batter is formed. Pour the batter into a lightly greased and floured 12 x 15 sheet pan and bake at 350° for 25 - 30 minutes.
