1/2 cup | nut butter |
2 | mashed bananas |
1/2 cup | whole nuts |
1 1/2 cup | dried fruit (cranberries, raisins, coconut, etc) |
1 cup | rolled oats |
1 teaspoon | vanilla extract |
pinch of cinnamon | |
1/4 cup | shelled pumpkin seed or sunflower seeds (optional) |
Preheat oven to 350*.
In a food processor, coarsley chop nuts and dried fruit.
Mix butter and bananas until it forms a paste.
Add rest of ingredients and mix (fork works well).
Spoon in lightly greased muffin cups and bake for 15 minutes.
Can be stored in fridge for 5 days.
