6 cups warm water (approx. 105-110º) |

14 cups freshly milled whole wheat flour |
With dough hook in place on the BOSCH mixer, add water, oil, honey, dough enhancer, gluten, yeast, and 6 cups whole wheat flour. Use the “M” switch to incorporate. Add approximately 6 cups of flour and salt. Turn to speed 2 and continue adding flour ½ cup at a time until dough cleans the edges of the bowl. Continue kneading on speed 2 for another 6-8 minutes. Oil your hands and the counter. Divide dough into equal portions and shape into loaves. Place them into greased pans and let rise until doubled in size. Bake at 350º for 30-40 minutes.
