Pancakes

From The Hawaii Passover Cookbook (called "When you live in Hawaii, you get very creative during Passover"), page 84
Recipe serves 1 multiply ingredients by the number of people to serve more.

I first made these 4/17/95. Alan says we should make these every year.



Ingredients:

1 tablespoon butter, melted
1 tablespoon matzo meal or cake meal
1 tablespoon sugar
1 egg
1 1/2 tablespoons milk

Directions:

Whisk all ingredients together thoroughly. Let stand 5 minutes. Grease a griddle or skillet. For each pancake, scoop a tablespoonful of batter from bottom of mix & drop onto skillet. Batter should be thin, so cakes will spread out. Fry on medium heat until lightly golden.

NOTES:
I omitted the sugar & used cake meal instead of matzah meal. Also I used a stick blender so it came out really smooth.
I also added 1/2 banana and some chocolate chips for 2 people.
