Recipe: Amish Broccoli and Cauliflower Salad

A perfect side dish salad of broccoli, cauliflower, bacon, and cheese in a cool and tangy dressing. It pairs well with many different meat entrees or is great as a stand-alone dish.

Ingredients:

4 cups chopped broccoli
4 cups chopped cauliflower
1/2-1 cup cheese cubes
6-8 slices bacon, cooked and crumbled
3/4-1 cup miracle whip
1 1/2 tablespoons sugar
1 1/2 tablespoons white vinegar
1/2 teaspoon salt
2 teaspoons dried onion flakes

Directions:

1) Cut broccoli and cauliflower into small chunks.

2) In a large bowl, mix miracle whip, sugar, vinegar, and salt. Add bacon and onion flakes, mix well.

3) Toss the broccoli, cauliflower, and cheese into the dressing. Mix well.

4) Refrigerate for at least one hour to allow flavours to meld.

5) Stir before serving.

Notes: I don’t like my salad too heavily dressed, so I use only 3/4 cup of miracle whip, and this may not seem like enough at first. But after it sits for an hour it will be more creamy. Although you can feel free to add the full cup if you prefer yours with more dressing.
Trust me on this one…you want to use miracle whip and not mayo or some other cheap brand of salad dressing. I usually keep both miracle whip and mayo in my fridge, because some dishes need miracle whip and some need mayo. There is a difference. Miracle whip definitely has a tangy flavor that you need in this broccoli salad. But if you are one of those people who absolutely cannot stand miracle whip, then I suppose you can use mayo, but it won’t be the same ;).
You can use shredded cheese or cut a block of cheese into little chunks. I prefer cheddar or Colby-jack block cheese cut into tiny chunks.
If you prefer, you can cut up raw onion to use instead of onion flakes. My family enjoys it better without the onion chunks.
We also used to add raisins, but I prefer it without. Feel free to add raisins, sunflower seeds, or whatever else you desire.
You can adjust the ratio of broccoli to cauliflower as you please.
