Chef Lynn Archer's Lobster and Bacon Quiche

A version of a Bobby Flay recipe.
Lynn Archer is chef and owner of The Brass Compass Cafe, 305 Main Street in Rockland, Maine.



Ingredients:

4 beaten eggs
1.25 cup half and half
1 cup shredded swiss cheese
scant salt and pepper
1 cup cooked lobster meat (chunks, not shredded)
1/2 cup crumbled goat cheese
1/2 cup crumbled cooked bacon
1 unbaked pie shell

Directions:

Preheat oven to 350 degrees.
Beat eggs and add half and half.
Add salt, pepper and cheddar cheese.
Add lobster meat.
Pour into unbaked pie crust.
Sprinkle with crumbled goat cheese then crumbled bacon.
Bake 40 minutes or until set.
